Easy Potato Skins Recipe



Oh my! These look absolutely divine! I sent my husband to the grocery store a few days ago, and he picked up a ton of potatoes. I'm not a really a big mashed potato eater, and I've been banging my pretty little head trying to come up with different ways to use them. This recipe is perfect solution. We love Mexican food, so I think that I will try adding some diced avocado topped with sour cream and cilantro. It'll make a nice Mexican style potato. I am definitely making a batch up this weekend. My family will love them! Thanks!
